I feel like the best way is demo the Sheetrock and replace it but not sure if it's a great idea.I could screw in new sheet rock threw existing and into the joists but I'm worried I might cause some issues with that and it would look crappy.

I couldn't agree more.However, I was once asked by a legal person to find all properties vested in the name if the American Red Cross in a certain county, They really didn't know!
