Newer dishwashers do have built-in food grinders to prevent large items from going down the drain, but connecting to the disposal is still recommended to help prevent drain clogs.It may be time to find a new inspector.

Be cause some woods have more visible grain, the irregularities in the surface need to be filled and sanded smooth, which is a lot of work.
