You do not have to use any attorneys if you don't wish to though I would recommend you contact one initially to help you decide the format of the documents you wish to use.

The person will still have to personally guarantee the loan, even if it's in the LLC.The formation of the LLC only really protects members personal assets in case of lawsuits against the LLC.
