a decent contractor should be able to match it pretty well when he sprays it...if not, you can always wet and scrape that one room, and re-texture...this way, that one room will be the same, and you probably wont notice different textures in different rooms unless the contract puts no effort in matching

Also keep in mind that if the exterior is in bad shape, you'll want to focus on that first, as a bad roof, bad gutters, bad siding, etc will allow the elements to continue to destroy the interior until they are repaired...
