When I do new kitchens, I typically remove the soffit as well and do the "stack" cabinets, taller ones at the ends and strategically locations, for a few bucks extra really makes an impact.The material cost for me to replace your kitchen cabinets with nice maple cabinets, from what I can see would be 1,500-2,000.
