I teach software security and there are a few rules that are very effective in blocking spam:if you don't recognize the originator (sender) of the email -> delete it.regardless of the subject line, follow rule 1Good email software allow the user to classify known correspondents, move them to specific folders, and classify all else as junk.Email list systems such as Constant Contact are rubbish and a waste of money when an informed user follows rules 1 & 2 above.

While a corporate entity is not the end all be all, it is a layer of protection for you (your assets more specifically).As to where to form, ALWAYS form in the state in which you are doing business, in this case, IL.As to the series LLC's, they are a great option for those states that currently recognize them.
