Also, all the electrical outlets and covers are old and off-white when all the trim is bright white.

Sometimes it’s only around the trim areas and it would make sense to replace the trim but that is usually not the case. 

Doors, toilet flange, baseboard trim,  and the cost of 5/8 for the whole house, plus don't know conditions of joists in the bad areas.

@Andrea McCants I would consider just pointing up the brick as needed and then using attractive wood  trim to cover over the ugly part. 

Trim today is usually 1/2" colonial/craftsman style. 

The 3 bedrooms/living area upstairs needed some basic cosmetic repair like wall/cabinet paint, new trim, new doors, etc. which I took 2 weeks off from work to do myself.

You will need to use a trim router to finish the edges.

Just new shutters and trim painted...Throw some numbers out there for a girl!

Then you tear out the drywall, framing and trim.
