Kitchens were updated with new custom cabinetry and quartz counter tops, stainless steel appliances, and professional-grade fixtures.

If the rest of the appliances are white and you have formica countertops with no plans of re-doing the kitchen, I would just stick with a white fridge.

I am planning to take out an equity loan to fix it up just to be livable nothing fancy (the area isnt a granite countertop stainless steel type of place), Very excited and nervous and hoping all goes well. 

High end laminate is fine.I'd go travertine over ceramic.Regarding counter tops -> granite / quartz is a must.
