Consult eviction attorney regarding commercial; I'm specifically a residential PM and commercial usually has different rules because of the nature of the investment and occupancy (tenant doesn't [usually] live there)

You should have, or you should create an amortization table that shows the actual interest paid on the $650k mortgage for the first 6 months while you lived there.

I would like to offer a place to sleep in the living room but I'm not excited about the options I see for sofa beds or sleeping sofas.

Sadly, we lost my mother-in-law to cancer two years ago, and my father-in-law has since realized he no longer wants to live there, though he remains emotionally attached.The home is in its final stages of construction, needing only finish work and a kitchen remodel to be rentable.

I have spent the last few years working in the Pre-Fab ADU space and now working with a company called Live Near Friends and help people buy real estate with the purpose of living closer to the people they care about. 

A furnished mid-term rental or month to month lease can be well worth the small incremental monthly cost for this flexibility if you are serious about finding a great live in flip candidate on your timeline, not that of your employer's. 

On the rental agreement it should clearly state that only those listed on the lease are allowed to live in the property.
