The last Loan Officer that I allowed to waste 10 minutes of my time was just out of a Political Science degree (minor in Econ.)

You have got this stuff down to a science I think.:) 

I also have degrees in Mathematics and Computer Science and a minor in Physics.

To answer your question generally I would say that you should select areas where there is diverse employment and you can future proof things a bit by ensuring that some amount of the employment is in industries like technology and life sciences.

It is fascinating about the mentality of male vs. female investors, and though it can be an uphill battle, it's nice to have a forum to explore and learn from in BP!

. - I did two years and got my AA in business at a community college- I transferred to an off main campus 4 year (CWU has remote campuses basically, this allowed me to stay somewhere that actually had jobs instead of working at a coffee shop for minimum wage) and double majored in accounting and business for my Bachelors of Science so I'd hit the 5th year CPA requirement. - Couldn't live at home (Parents in a small town with no college) - Worked full time while going to school full time and I still have student loans. 

I'm on the older end of the millennial generation at 32 and graduated college with a Political Science degree.
