The property is off grid, but already set up with solar and a compost toilet and things of that nature.

You do not want to be taking 2AM calls at night about a clogged toilet from across the US.

You are going to send your wife to personally unclog that toilet.

Do you like people and handling renters and toilets? 

There is something called a "wet wall" that the pipes go through behind the toilet and sink or wherever pipes are.

Frozen puke in the toilet etc.Any suggestions?

I've been looking at duplexes and tri plexes but nothing has panned out yet.
