@Jason DiClemente I also have been thinking of them in terms of customers, but the custodial aspect adds a different dimension to my thinking.

@Rick WadI don’t have the dimensions off-hand but I would say the entire width is about 12-13 feet on each side all the way back

Without a set of plans, with dimensions for everything, plumbing, electrical, parts, fixtures, finishes, etc. there is No way a gc could give you an estimate.
