Another thing I'm struggling with is the two bedroom closets, Should I keep them as they are or swap the doors so the main bedroom door is for the closet closest to the perimeter wall?

These foundations usually have only two components:Outer stemwall - this runs around the perimeter of the buildingBeams on piers - this is what your floors and most non-load-bearing walls are sitting on.It is the interior beams that can settle and "deflect" and these are rather simple to fix, so long as the crawlspace allows the foundation company sufficient access to tinker with the piers and perhaps add a few more pad piers.
