First thing I would do is get rid of that black frig,,,makes the kitch look dark.Second I would use the hole above the ceiling light and drill a hole thru both ceiling joists and put 2 or 3 fluorescent light fixtures on ceiling with the bright white daylight bulbs in them.Could opt for several can lights if you want to go high chic.

Tomorrow and Friday are coming, not sure if it will be done this week or not.The electrical, well, they did leave some metal fixtures for the long fluorescent lights in the patio.
