Another option is cheap porcelain tile.

I'm planning on using Luxury Vinyl Plank (LVP) throughout each apartment, and was wondering if I should switch to Porcelain tile, LVP, or LVT in the kitchens and bathrooms?

If this house is 40% larger than all the STR in area expect to be the party house and use porcelain tile floors, concrete polished countertops and indestructible appliances. 

I prefer porcelain tile over LVP, it lasts just buy extra pieces- place un-grouted under sink in bath and kitchen for spares.

Cheap way:  Silicone hole- let dry- then with a porcelain touch up kit, touch up the silicone area.

A plain porcelain toilet will do.;-) Since you don't mention the scope of work, (roof, termites, AC, water heater, flooring, cabinets, etc) it's hard to get too specific on reno costs.

Total renovation with new appliances and cabinets in kitchen and bathroom including all new laminate flooring throughout and porcelain tile in bathroom.
