There is no pantry, but plan to put some shelves in the area just around the doorway. 

If their request is for interior painting, consider a written agreement that they will have all walls cleared of their personal items (pictures, shelves they've put in, etc.) with the date range, adding in several days for delays, all personal belongings moved into the middle and covered, all at their expense, and that neither you nor the painters if you're hiring out will be liable for any damage to their personal property. 

The shelves and boxes are cheap but all of the pre-fab ones are cheap these days.

Find stainless steel tables/carts/shelves to fill the empty spaces, and add a stainless backsplash panel thingy where the hole in the wall is.

Having said that, the reservations are flying off the shelves.

Ultimately, there's only one fundamental way to balance a debt-laden budget: Increase Revenue (taxes/fees in the case of government) and CUT Spending!

It has been closed for 12 years, but still contains a large walk-in cooler and some display shelving, and has no bathroom.
