Run the numbers you may do better long term or renting as a whole unit.

I am also doing a live in full renovation for a long term rental where I am project managing mechanical items and doing a lot of the interior renovations myself. 

I think there is value in ADU as long as it is legally done and can be legally rented.On the sale side a benefit can always be an in law suite.

I am still trying to figure out my buy box, but long term rentals feels like the right strategy for us.   

I can envision that the numbers on these luxury homes would lead to to a long lag time...but hopefully I'm wrong.
