I personally wouldn't sweat the lawsuit but I would try to find them a more suitable rental.If they are decent human beings, they would try to find a more suitable location, as well.

For that I would remove the doors on the cabinet above the stove and make it suitable for a microwave or if that shelf at the end of the kitchen is intended for a microwave you could put some wall cabinets under it for good support then paint to match as the others have said.
