The owner I worked for wasn't internet-friendly, so I'd have them send payment with tracking, either the priority mail envelope from USPS which takes 3 days or less for around $5.00, or some overnight service, if it was time-sensitive.

Personally, I try to stay away from sensitive information as much as possible - including social security numbers, as it presents a liability issue.
