You could sue him, which would probably be like getting blood from a rock.Or, you could make sure you haven't paid beyond what he's done and then hire the next person to come finish - which will cost extra, because nobody likes working on top of anyone else.Or pay him extra to finish, which is kind of a bad idea for a number of reasons.

A Hold Harmless and Indemnification agreement is incorporated in the sale contract and that may only be as good as the seller's ability to pay damages, can't get blood out of a rock you know, so you could be stuck with future claims as well as illegal activities that might constitute fines against the company.
