Do we just kick out a tenant that has been paying on time for the past three years because they snapped their leg in a car accident and can't work or incurs large medical bills?

Both the bike rider and the person in the car will have an accident.

So even if you pick a state with stronger protections like WY or NV, the cause of action arose in the state where the tenant fell, so likely that the court where the accident happened would have jurisdiction.California tends to have more laws on the books and requirements and restrictions that it can be a good idea to form a CA LLC for out of state property so that you as a CA resident are covered, and to try to have your contracts fall under the purview of CA courts.

It will also help protect me if (and only if) I have an accident while on company business and get sued because of the accident.

Since the Schedule of Beneficiaries is not publicly recorded there is nothing to prevent an unscrupulous landlord from changing the listed beneficiaries of the property2 through property5 trusts from Numero Uno LLC to Numero Dos LLC and backdating the document to before the accident.
