.- Entire home rentals will be capped at 180 days a year (no caps on renting up to 3 rooms in your principal residence) I am wondering how short-term rental hosts have adapted to similar rules and how my fellow Toronto hosts plan on adjusting to the rules.

Then you adapt and adjust :) In the end start and worse case scenario you wrap something up, have an "oh crap" moment as you find out it's infested with God knows what, or everything needs replacing, or all the fun unforeseeable stuff, and then back out and try again :) Mike

And, as i said, you can get the more expensive solution bars (Which can be quite lovely, honestly, if you shop around--igot some nice wrought iron designs for a historic home) that have the release, so the industry has a wide range to adapt to the laws of that municipality.
