They also broke the washer, dryer and I have no idea what they did to the stove, but it needed to be thrown out, and it was fairly new and a nice flat top model.

The least expensive way to help remedy that (other than moving the stove to the island) would be to reverse the placement of the stove and dishwasher (also giving you direct outdoor venting for your fan).

You’ll be able to get financing (haven’t had an issue yet; I once had to remove a stove and the appraiser returned to verify, and then I put it back in its place), you’ll be able to get insurance, you’ll be able to find tenants.
