Eventually, what worked out well was ALL the dishes were in the sink and you just washed what you needed. ie, need a pot for heating a can of soup?

Then I would get an estimating book like the Hometech book, which has standardized pricing per unit of measurement, and sit down with a calculator, notebook and pot of coffee and calculated it all out to see what actual costs "should" be.

You need bench strength here - not sales people.
