.- They have a bucket of loans called "non-qm" (before 2008 it was called "subprime" and had a >20% market share, now it's called "non-qm" and has like a 3% market share) and a subtype of that is "bank statement loan" (the closest that presently exists to, and what replaced, "stated income" loans, basically) Rather than evaluating your income based on tax returns, they will ask for 12 or 24 months of your business bank statements, and will calculate your income from that.

  #5 Try to get in good with the local merchants closest to your property since your first line of defense will likely be these folks (like store and restaurant owners)  looking out for you since its likely that they know the locals and have some influence when it comes to convincing them to leave you alone. #6 Try to avoid a routine.
