What concerns me is that a large portion of the population speaks very little or no english.

If you chose dark cabinets, countertops, etc, you'll need to use more lighting.If you kitchen had a southern exposure, I'd steer away from white cabinets unless your whole house is designed with distressed white accents, such as casual country, English cottage, etc.
