I've noticed that very popular tourist markets with grumpy local residents tend to default to "30-day minimum rentals" (Hawaii county, San Juan WA county, Chelan WA county, etc), but major metros seem to be all over the map on minimum nights.

It's for residents of the neighborhood, not tourists. 

Table Rock Lake and Branson are both popular tourist destinations, so there is definitely demand for short-term rental properties in the area. 

While the city experiences its peak tourist season during the summer months, it remains active throughout the year.

Location is in close proximity to Disney parks and tourist spots.

I own a furnished 800sqft house here that I use as a short term rental through airbnb and VRBO and it stays pretty busy between the base and tourists going through Death Valley, but we haven’t had much luck filling it for any more than a week or two at a time and mostly book two to three night stays.

It checks a lot of the boxes; long history of short term rentals, regional tourist location, stabile multi-faceted economy, minimum government oversight/regulation(to this point).

Again, STR are not technically allowed for "tourist homes" in very many places in the city as most, but not all, R2B zoned areas are limited in the number of residential houses in them, but are many times commercial spaces such as small dental offices.
