Often times when a builder/buyer moves too fast, or is too busy and overlooks a key piece of due diligence, the unethical ones will try the "scorched earth" method and blame everyone but themselves, even when they know it was their own mistake, and they'll see if they can scare you, the seller, the title company et al into paying damages/fixing their problem. 

Work on raising revenue so that you can pay yourself more.

This would limit your options for the financing packages you might be able to get or which lenders would be willing to work with you since most lenders will want to see 2 years of pay to qualify you.

How would the bank even know the gross pay amount?

I love the story of your artist friend, honestly it never came to mind to incorporate the two together for a marketing hook!

I pay close attention to market pricing.

And keep in mind private sellers and wholesalers dont help either when they wont entertain offers below ask either.

I would say pay the taxes.
