Each unit needs a little fix up, but should I attempt to put small stove/ovens and small fridges in so each unit has somewhat of a kitchen?

I don't work in the rental rehab space, only flips.Personally I like to do accent walls, wainscoting, crown/trim work, accent tile, functioning kitchen spaces, wine racks, wine fridges, etc...For a rental I would probably avoid all of this and go with basic, clean and sturdy over fancy and nice looking. 

One fridge will die every year. 

And yes, it'd be nice if the fridge hinged on the left side.

Have them generate a fridge magnet to give your tenants and ask them to call them for all maintenance issues. 

Rental I bought had a guy who replaced the old terrible fridge with a used one in good condition, right before we purchased the home, and he had agreed not to take it with him.

Things like "when did I last replace the fridge in 4B?"

If most people are flying to your destination, it's much harder to get 15-30 or more people together, and those larger homes stand less of a chance.While I've done a bit of research in Galveston, definitely not enough to answer your question.Another angle to consider if it's legal from a short-term rental and ordinance perspective, buy a home with a number of large bedrooms, and create exterior doors to each of them, put in a kitchenette with a microwave and mini-fridge, and rent them separately, in particular if most/all of them can have en-suite bathrooms. 

I saved $1000 on my personal fridge there.
