My rationale for going the route above is that I know as an amatuer I will only be able to get the floor "SO" level and this would give me the most room/cushion for error and hide more imperfections.

Depending on how well you can clean up the imperfections with Bondo & wood putty, I would strip the varnish, repair as needed and re-varnish.

@Kathleen McCabe most buildings from 1924 will have saggy floors (as well as a host of other imperfections which real estate agents like to file into the “charm” category, lol).
