in 1 of the 2 claims, we had to pay our drywaller to strip the stand of the old water-damaged drywall that was on it, and replace it, texture it and paint it prior to the water heater guy coming to replace the new one.

After that step, I would install a subfloor with textured plastic underneath to prevent against a minor water intrusion and go with whatever flooring you want.

That being said, we just completed an 824 Sq Ft 2 bed/1 bath FULL GUT, and it took us just under 2 months (demo, plumbing, electric, roof, scraping popcorn and re-texturing, drywall, full new bath, full new kitchen, flooring, paint inside and out, landscaping, etc).
