Some industries and companies have not adopted it yet, but some big names on Wall St. have, and I think more are coming.

I then sold the “business” (equipment, name, signs, goodwill, etc) to an operator for $50,000 cash, and the operator signed a five year 3N lease at $3,000 per month.

Do not hand out keys until you get the first month's rent and make sure all utilities are in their name. 

As of this week, I had an initial phone call with a Paralegal named Lorraine from RLS, who seemed knowledgeable and was able to answer 2 of my 3 semi-complicated questions. 

Should they be using our name?

You have used your full name and stated that you don't want to rent to disabled persons, so that is now searchable if any tenant should ever start looking.
