Are you familiar with the eviction process or dealing with non paying tenants in LA?

I would pay for all my food and everything. 

Let her know at this point since the dog was already there, she had 2 options - pay a $300 security deposit and an extra $30 per month AND put the pet through our screening process OR get rid of the dog.She made a call to see if she could return the dog from wherever she got it, called me back, dog gone. 

Don't make them angry or they might spit in your food.  

You could either move into that side and repeat the process or hire the work out depending on your situation.  

Everything from food, to clothing, to transportation, every item of spending I can live without, I'd live without it. 

Also, in very rural areas you may lack the food, entertainment, infrastructure (reliable high-speed internet and cell service), and lifestyle that you may want.  

Just some food for thought, make sure you look into what the carriers are like to deal with when you truly need them.

As far as the $15/hr min wage, I think a lot of momentum would be assuaged if some states would raise their food service worker minimums above $3/hr.
