You have 2 very easy paths forward to get your deal done, and it sounds like you're choosing not to pursue either of those easily attainable paths.

I hope to be an example that home ownership is attainable.

We keep each other on track to attain our goals.

And, if and when you attain that, you can easily get fired at any moment (I've seen it countless times as executives get into their 40's) and then you're down to zero income overnight (with a hard time finding a new gig).  

We are in our 30s so I'm hoping that is an attainable goal.

If a ready, willing and able buyer makes an offer, the probability of that price being attained for that property (by definition) is 100%, is it not?

- Seller issues with attaining another mortgage while holding original as well?
