I think its a great idea and worth the potential annoyance of living on top of each other a bit but my wife is a lot more skeptical about it.

And you also run the risk of painting/finishing a wall...then tearing back into it because you have to move a line (so annoying) It’s doable, but try to stick to timelines and budgets.
