Tamarindo is not in the recipe and achiote was part of the trial and error process but getting the little pebbles and crushing it didn't make the process as fast as we wanted it to.

How are you going to manage the day to day trial and tribulations of dealing with a contractor and dealing with all of the aesthetic decisions?  

I would choose the granite, as the natural color variations add character, but what do I know? 

It will make the meeting with the lawyer much faster and if they are wrong, it is exhibit 1 in the trial.
