I’m a big plastic fan, PEX working pressure for ¾ is about 150 psig it doesn’t freeze so it is lower than ¾ copper tubing about 700 psig, 6 of one half dozen of the other, I wouldn’t waste my time from a freezing standpoint.

Sponge baths only work for so long before you want a real shower.Maybe a big stack of paper plates, plastic silverware and cups would also be a good gesture since they don't have access to hot water for washing.
