If you keep the heat on, there should be no risk.If you are shutting everything off, I recommend talking to a couple plumbers to see what the risk is.

I understand if you want to sell your restaurant and want to exchange for an apartment etc there will be some restriction.

I’d recommend a waiter at a high end restaurant.

Go to unit with new tenants, give them "tenant training" on water shut-off, fireplace, fusebox, etc., and wish them well!

We just want to drop them off with the doors taped shut. 

There's a ton of bars, parks, restaurants and yoga studios that you can walk to.

Let your business be the one and not local media outlets to be the provider of content of the best local restaurants, the best local schools, the 10 best things to see and do this weekend all, etc... in all the area you service.See by approaching it this way You are now becoming the source for people that want to move to those locations and or maybe want to sell their house but stay in the local area. 

The fact that they would respond with anything other than "YES" or "BAFO because of multiple offers" is beyond me.You gave the seller an inch of rope and now they're trying to strangle you with the whole darn thing -- I would say you are comfortable with the offer you gave at the terms enclosed.The why is sort of irrelevant, they obviously have something in mind but if you put a property on the market and someone offers you more than asking, as my old English teacher would say, "shut up and take your apples."

Maybe he just needs to make sure the door is shut or walk out another ten feet before lighting up.
