The part where you mention hiring full-time maintenance guys for $15 / hr stood out to me and raised all sorts of questions - It seems to me that most contractors specialize in a particular trade.

Use profits from the sell to finally pay off all bad debt (aside from a 40k mortgage.)Get the roof trusses raised and cement pad in the barn for storage and man cave build.I'll go a step further with 2020 goals since realistically my goals for the rest of this year are lacking.

Obviously, drywall with joint compound has stood the test of time at this point, but from heavier skim coat applications, perhaps the "button board" is a good idea.

If a new house were to be built, would it be best to build one that's similar to the one that once stood there (one of those generic mini-McMansions with 6 bedrooms etc) or would it be better to build one that is a slightly bigger/fancier?

There was no basis and the eviction stood, but they played the game and gained another week, and I was told the Sheriff won't enforce an eviction if there is a future court date on the matter.
