Humidity is no problem for wood floors, traditional or engineered....actual water standing is a problem as it swells the “engineered” base of newer wood floors. 

Also keeps the humidity out of your home which is a great source of mold.

With hurricanes, the extreme moisture and humidity and heat, lets not forget the heat.

Given their harsh winters, and hot humid summers, would I want to live there?

If going to ceramic, you can install the subfloor directly over the VCT.The difficulty in removing VCT varies greatly, depending on type of glue used, age, time of installation, humidity, temperature, type of subfloor.

Maybe it was just the overall humidity.
