I was just listening to a podcast where the guest was saying that any information the property owner volunteers can be considered a "deliberate act" (that is probably not the exact term, but I forget) which allows my insurance carrier to deny any claim.Second, my W2 job is such that I cannot easily miss work, outside of paid vacation (which is scheduled months in advance), I only get 3 personal days per year and I try to reserve those for weddings/funerals/family emergencies.Despite those concerns however, I will probably end up writing the letter.

If you want to voluntarily expose yourself to additional risk (based on actuarial data, not anecdotal evidence about dogs you've personally owned), then that is your right as a business owner.The issue is that this breed comes with it an inordinate amount of risk compared to the relatively small benefit of allowing them.You've heard the reasons people (and their insurance carriers) have for excluding them.

Your premium will likely adjust and if you have too many claims in too short of time then you will be dropped from carrier and have to shop for insurance in second tier market (more money, less service).

It was a tough to insure property, so the carrier ended up being Lloyds of London.1/3 off for 20x the coverage...Insurance brokers don't have a rate advantage, meaning ABC Carrier's rate is ABC Carrier's rate no matter if you go through a broker or call them directly, assuming you are comparing apples to apples and no one is upselling extra stuff.
