The learning curve for plumbing is a nightmare, you'll spend a lot of trips to the store and get frustrated starting over constantly. 

You really need to decide on what is most important and then start looking. 

With that said, it's best to START it like you're going to outsource everything, so it will be easier once you decide to make that transition.
