I have no experience in the field and understand fully it's not a simple endeavor. 

If by real estate business you’re implying you have little or no money to invest but are contemplating using one of the guru inspired methods (subject to, “wholesaling” , fix n flip) to create cash flow, I’d encourage you to do research on the true success/failure rate of people who engage in these endeavors, the amount of money the successful operators spend monthly on marketing, and the real time commitment and knowledge and experience necessary for success.  

I wish you the best of luck on all of your endeavors for they are feasible depending on how hard you want to work because this is definitely not an over night get rich quick kind of thing.

A CPA and lawyer should be part of your team but not necessarily from the same in house group for assurance purposes - @Paul Beets depending on your framework you should leverage the two separately of their industry knowledge, experience and network to grow your endeavors. 

Then narrow your efforts to those types of endeavors that also have a payout.

I am trying to figure out if probate/wholesaling can lead to an ongoing profit that can be transitioned into a full time business or a side endeavor that may pay out a couple times a year.

Not only will this help you save on additional costs, but it will also provide you with valuable knowledge and experience for any future endeavors.

Any recommendations on mentors on how to pursue this endeavor?

A good financial advisor that understands your situation and a good estimate of future cash flows would help greatly.Calculating cash flows is actually the easier part of this endeavor.
