I know this is some what old...If cabinets are in sound shape has anyone tried removing the doors, gluing on a 1/8” sheet of oak ply, use a router to open up the doors and drawers, and paint or stain.

My suggestion would be to rent for 1 year as roommates to see if you both mesh well regarding paying bills, cleanliness, habits and things like that, since you really don't know someone until you live with them .
