My contractor is easy to work with but yes I have heard many horror stories about contractors. Once you find a good one, it is a life saver and I was lucky enough to find one right off the bat here in BiggerPockets. You still should be very involved even if you have a great contractor. I always make sure to send them a list of what I want and also make it clear that since they are my eyes on the ground, they need to point out anything else that needs done. We communicate with a lot of pictures throughout the process and they also send pictures of the work once they are done. There are always issues that come up along the way and the key there is also communication. You'll quickly know if you have a great contractor or a bad one. Hope this help!
