This seems odd. 

There are many small types of countertop appliances that can be used in an event like this. Electric griddle, air fryer, etc.

$3200 seems like a lot to let go. Id at least speak with a PI and see what the costs will be. Obviously you have their full name and probably more info for the PI to use.
