Nathan is right, the pipes if newer material may be fine, but an empty old galvanized pipe may be toast.  One thing to make sure of while you are doing the fixes is that things are permitted that need to be (plumbing, electric, structural items, roof) because down the road when you sell your property disclosure may ask if items repairs were permitted.

If you are going to start ripping things apart, maybe look at the spray-in closed cell insulation as an option.  It is dense and seals in the nooks and crannies quite well.
