Best way to find ownership history of a particular property?

Hopefully I chose the correct category for this question.

I've managed to gather information on current property owners for a particular address by using data from my City's Recorder of Deeds/Tax Assessor website. However, I'm having trouble finding ownership history.  What if I want to see who used to own a property?

Do most cities keep track of this data?  What would I be looking for? Title history?  Transaction history?
