How long should a flip normally take? And what are some good exit strategies?

It depends on the scope of work and the market. It can take a few days to several months. 

There is only one way to exit a property which is to sell The are several ways to do that like owner financing, rent to own etc. Only other strategy would be to refinance and rent.
