Evictions in Harris County Texas

I have been using an eviction company in 2016. They seem to be too busy to get my evictions done in a timely manner, and have a hard time knowing what the results were once filed. I want to start doing evictions on my own. I guess I could spend an afternoon in eviction court to see how it is done. Where do I obtain a 3 day eviction notice? Also can I send it via certified mail or have a Sherriff deliver it? Not sure where to start since there doesn't seem to be any books on the subject.
